Traditional coffee machines, traditional methods

For people with “old-style” expresso machines, making an expresso requires a certain amount of discipline:

  • Take the filter holder;
  • Empty the used coffee into the drawer;
  • Clean the grind residue with a cloth;
  • Add new ground coffee;
  • Level off the coffee grinds with a “spreader”. Make a half-turn then knock the extra coffee powder off the filter with a sharp tap of the handle, then press the ground coffee down firmly to avoid the water flowing through it too quickly
  • Push in the coffee group and run the water for 10 seconds
  • Insert the filter holder and let the water flow
  • Put a cup under the filter holder straight away
